Garden Fresh Frittata

4 each        Eggs
1 ½ Cups    Egg Whites
½ Cup        Skim Milk
¼ Cup        Low-fat or Nonfat Cheese (cheddar, jack, swiss, parmesan)
(optional items)
¼ Cup        Vegetables (mushrooms, zucchini, peppers, asparagus, etc.)
¼ Cup        Breakfast Meat (turkey sausage, turkey bacon, turkey ham)    
*salt and pepper to taste*

Yield:        Makes 4 portions
    
Method:    Preheat oven to 350 degrees F.  Mix together eggs, milk, salt, and pepper.  Grease pans with pan spray.  Pour egg mixture into pans until they are ¾ of the way filled.  If either meat or vegetables are being added; do so now.  Top each with cheese.  Bake in the oven for 12 minutes or until the egg is set and the cheese is golden brown.  Turn pans upside down and knock the frittata's out onto a cutting board.  Cut into equal triangular pieces; serve.
