Honoring National Grilled Cheese Sandwich Day

Good Day Atlanta is honoring National Grilled Cheese Sandwich day by -- yes, you guessed it -- whipping up a delicious grilled cheese sandwich! Chef Nick McCormick at TAP is making a Cowgirl Creamery Grilled Cheese that's paired with Tomato Bisque!

Recipe: Cowgirl Creamery Grilled Cheese
Serving Size: 4

Grilled Cheese
Ingredients
4 ea. Ciabatta breads (sandwich sized)
21 oz. (about 3 cups) Cheese mixture
12 ea. Basil leaves

Cheese mixture

7 oz. (about one cup) Grated Mezzo Secco cheese
7 oz.  Grated Gruyere cheese
7 oz.  Formage Blanc

Method
Mix all cheeses together thoroughly. Preheat oven to 400 degrees. Slice bread lengthwise in half. Split cheese mixture between bread bottoms.  Bake without top for about three minutes.  Place two large basil leaves per sandwich. Place bread lids on top.  Continue baking for about three more minutes or until cheese is soft all the way through.  Cut in half and serve with tomato bisque (see details below).  Garnish soup with fried basil leaf (optional)
