Old Homestead's best burger ready for Burger Bash

The annual Burger Bash at the New York City Wine and Food Festival is the biggest burger competition in the city. Dozens of chefs from different city restaurants compete for the top prize.

"It's about saying that you've got the greatest burger in New York City," said Marc Sherry, the co-owner of the Old Homestead. "You've got the bun that everyone likes. You've got the cheese. You've got the condiments. It's all about the bragging rights."

Preparation for the greatest burger in New York takes time, a lot of research, and a lot of brainstorming. And the possibilities are endless. Chef Juan Acosta said it is all about the meat.

"No matter what we're going to win this Burger Bash because we have the best combination of the meat," Acosta said.

Then it is time for a taste test to decide which burger will compete. I was invited to be on the judging panel, and trust me it was not an easy decision. All four top contenders were delicious, but there was one that stood out among the rest: a blend of brisket, chuck and sirloin topped with Floyd's beer cheese, red onion, pretzel crisps and Dijon chipotle aioli and served on a potato roll.

"It was perfectly cooked, when I tasted it the juices flowed," said Greg Sherry, co-owner. And the condiments, it all worked together. The roll put the final touch on it. This is a winner for the Burger Bash."

Chef Romeo Dibona said: "It all kind of like went together -- the pretzel, the mustard, the beer. It all kind of like mingled."

Marc Sherry's verdict: "I love it -- we're going to burger bash with it."

So will it be a winner? We'll find out at Burger Bash on Friday, October 18. In the meantime, you can try it for yourself at Old Homestead this month.
