Chef Ingrid Hoffmann: Recipes With A Healthy Twist

Ingrid shows Steve and Lisa how to prepare TURKEY CHILI (recipe from Ingrid's latest cookbook – LATIN D'LITE: Delicious Latin Recipes with a Healthy Twist)

 

  • Have 2 pounds of ground turkey breast browning
  • Latin-inspired dishes are so tasty and delicious, but can be so fattening at the same time. Turkey is perfect for chili – you are adding so many flavors that you will not miss the beef allowing you to save yourself about 100 calories per serving!
  • Cook on the stovetop until the liquid has evaporated
  • Adds:
  • 2 medium yellow onions, chopped
  • 4 garlic cloves, finely chopped
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 – 14 ounce can chopped tomatoes in juice
  • 1 cup reduced-sodium chicken broth
  • ½ cup lager
  • 1 tablespoon tomato paste
  • Kosher salt
  • Freshly ground black pepper
  • 1 – 14 ounce can red kidney beans, drained and rinsed
  • 2 ounces bittersweet chocolate, finely chopped
  • Cook for about 20 minutes on the stove top
  • Although the chocolate may sound odd, you will not necessarily taste it and will add a lot of body and a touch of sweetness to the chili. The spices and the chocolate make this dish.
  • Bowls already plated: garnish with sharp cheddar cheese and scallions
  • You can add a dollop of greek yogurt for a creamy twist (Make reference to tablescape)
  • Makes 4 to 6 servings

 

Turkey Chili Recipe (recipe from Ingrid's latest cookbook – LATIN D'LITE: Delicious Latin Recipes with a Healthy Twist)

  • 2 tablespoons olive oil
  • 2 pounds ground turkey breast
  • 2 medium yellow onions, chopped
  • 4 garlic cloves, finely chopped
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 – 14-ounce can chopped tomatoes in juice
  • 1 cup reduced-sodium chicken broth
  • ½ cup lager
  • 1 tablespoon tomato paste
  • kosher salt
  • freshly ground black pepper
  • 1 – 14-ounce can red kidney beans, drained and rinsed
  • 2 ounces bittersweet chocolate, finely chopped
  • sharp cheddar cheese, shredded, for serving
  • scallions, white and green parts, chopped, for serving

1. Heat the oil in a large saucepan over medium heat. Add the ground turkey and cook, stirring occasionally and breaking up the meat with the side of a spoon, until its liquid has evaporated and the turkey begins to brown, about 12 minutes.

2. Add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes. Stir in the chili powder, cumin, and oregano, followed by the tomatoes with their juices, broth, lager, and tomato paste. Season with salt and pepper. Bring to a boil. Reduce the heat to medium low and partially cover the saucepan. Simmer, stirring occasionally, to blend the flavors, about 20 minutes. Stir in the beans and cook until the cooking juices are thickened, about 10 minutes more. Stir in the chocolate until it is melted.

3. Spoon the chili into bowls and sprinkle the cheese and scallions on top. Serve hot.
